High Volume italian restaurant looking for experienced, hands-on Sous with a STRONG passion for food and ability to lead people. Must have recent hands-on experience with preparation & plating. Experience w scheduling, budgeting, managing food and labor costs. Basic knowledge of P&L analysis. Culinary degree & Spanish a plus.
